It is blueberry season, which has to be my absolute favorite fruit season. I grew up in Michigan blueberry picking with my mom every year around this time. We used to go this old farm where the blueberry bushes were the size of small trees. I could literally climb up the middle of the bush to get to the high branches that were out of reach. And while living in California sometimes it is hard to even notice the seasons, the days are a bit longer and warmer and blueberries are a plenty. KitchenAid® recently invited me to try out their Pro Line® Series Blender so to add to the summertime vibe, I’ve been making these super simple and delicious ‘blueberries & cream’ popsicles for Archie and I to nibble on. I am trying my best to keep the taste of summer lingering on as long as we can.
BLUEBERRIES & CREAM POPSICLES
Ingredients:
1 Cup Blueberries (frozen or fresh)
1/3 cup half & half
1 Cup Greek Yogurt Honey to taste
INSTRUCTIONS:
1.Blend Blueberries and Half & Half in a blender. I like mine a little chunky so I only blended for a few seconds.
2.Pour the blueberries into a mixing bowl and fold in the yogurt and honey. To give the popsicle the speckled look don’t mix it up too much. Just enough to evenly distribute. I used about two tablespoons of honey but if you like it sweeter add more or less honey for less sweetness.
3.Pour the combined ingredients into popsicle molds and freeze for 4 hours or overnight.
4. When ready to serve: help loosen the popsicles from the mold by running it briefly under warm water.
Archer has so far refused to drink cow’s milk so I have been getting creative with ways to serve yogurt any chance I get. The Greek Yogurt and Blueberries make this a healthy treat we’ve both been devouring on repeat.
